Bubbly Limoncello Cocktail

My grandma had a very strict cocktail time. It was 3:30 every day. And, at least later in life, her choice of aperitif was almost always a glass of red wine. However, every once in a while, like around her birthday or other celebration, she would drink the tiniest glass of Limoncello. 

When I came across this cocktail, my heart ached a little knowing how much she would have loved it. The combination of Limoncello and Prosecco floating around a lemon sorbet is sinfully citrus and perfect for a warm and humid summer evening. 

The fun part of this cocktail is also finding the perfect glassware. I found several cobalt blue coupe glasses at a popular retailer (the one where everyone accidentally spends hundreds just by walking in). I love how the muted yellow paired with the darker blue shade. 

I topped it with a fresh mint leaf from the garden and voila! A perfect summer cocktail in celebration of one of my favorite people. 

WHAT YOU’LL NEED

Lemon Sorbet - I love to get a pint from a local ice cream shop so I know it’s fresh.

Limoncello Liquor - this is a distinctly Italian liquor, so look for a bottle imported from Italy for the best taste.

Prosecco - you already have this on hand, right? Don’t answer. If you are only having one cocktail, most stores sell “splits” (4 small bottles) which would be perfect if you’re only making one or two of these cocktails.

Mint leaf - this is for garnish only. If you eat this after you drink the cocktail, you’ve made it too strong.

 

THE RECIPE: BUBBLY LIMONCELLO COCKTAIL

  • 1 scoop lemon sorbet

  • 1 shot of limoncello liquor

  • 4 oz Prosecco or other sparkling white wine

  • 1 fresh mint leaf

 

DIRECTIONS

  1. Using an ice cream scooper, scoop a rounded mound of lemon sorbet into the coupe glass. 

  2. Pour the shot of limoncello on top.

  3. Pour in the very chilled 4 oz of Prosecco at an angle to reduce foam.

  4. Top the small fresh mint leaf on top of the mound of lemon sorbet.
