
Fire Roasted Weeknight Chili
This recipe is like a Frankenstein mash up of a couple recipes, but I focused on the few ingredients that had the most flavor. This keeps everything simple without losing the flavor. My kids beg for it at least once a week. And the joke is on them, because all the ingredients are healthy!

I have small windows of time to cook or bake. Sometimes peeling isn't an option (too time consuming). So here are my favorite recipes to use at least some of my farm fresh apples.

Easy Pumpkin Apple Muffins
I love pumpkin bakery. When the weather turns cooler and the leaves start changing, I crave the spices like cinnamon, nutmeg, and cardamom. Add in tart apple and I'm ready to hide my waistline with oversized sweaters.

Cast Iron Apple Crisp
This one tastes like Paula Dean just hand delivered autumn to your doorstep. I don't skimp on the spices. This recipe uses a lot of cinnamon, nutmeg, cardamom, cloves and even sneak in a dash of cayenne. (Don't worry, it's barely noticeable so your kids won't complain that it's "too spicy.")

Crispy Bacon Apple Brussel Sprouts
I've made this recipe twice now for my family. Depending on the type of bacon you get, it might take a little longer to crisp up. Make sure to throw your oven on broil at the end. The bacon fat coats the Brussels and apples evenly as you mix it around. It's amazing!

Luckily, these are super easy to whip up and I add a little frosting to get my fix in before we all start New Years Resolutions.
